Anyday Spice Blend
A stellar spice blend is one of the easiest ways to amp up the flavors of a dish. This one is a bit different, but goes well with almost anything and will give you crazy flavor for months to come.

crumble after toasting
red pepper flakes
less or more, to taste - optional
Kosher or sea salt - omit if want salt-free
sweet or hot depending on taste

In a small dry skillet, heat the bay leaves, peppercorns, cumin and fennel seeds, red pepper flakes and rosemary over low heat until fragrant - be careful not to burn. Set aside to cool.
Add the cooled, toasted spices to a spice grinder, crumbling the bay leaves just a bit, and blend until coarsely ground.
Add the salt, onion and garlic powders, and paprika and pulse gently to combine.
Transfer spices to an airtight jar and label as "Anyday Spice"!
Feel free to add some dried parsley to the mix if you have it on hand.
This will fill a standard 4-ounce spice jar with a little left over that you can use right away.
